Healthy food – the future of gastronomy

Perfect Project is a partnership leader whose aim is to present perspectives for the development of organic nutrition in gastronomic facilities in hotels as a method of tourist hotel product diversification. In the partnership, we would like to try to answer the question: what obstacles do schools, hoteliers and restaurateurs want to introduce this type of food into the curricula and menu of their institutions? Healthy food is the future of gastronomy. The Polish, Spanish and Latvian catering market is moving towards healthy and organic food. People have an increasing awareness in this area. On the above markest there are more and more organic food producers operating on the market, for example, farms specializing in products traditionally produced products characteristic for a given region. At the same time, people are living faster and faster. Together with partners, we would like to look at the problem of how the catering industry can become more and more competitive thanks to organic products, such as healthy fast food. There are no elements of organic cuisine respecting regional products in the teaching programs in catering and related events. Therefore, students have a chance to get to know it only in additional initiatives undertaken by schools. Gastronomic modernity also consists in restoring forgotten and displaced products to menus.
